Midwestern Chili

Midwestern Chili Recipe

  • Optional:  Chop small amount of salt pork into fine pieces and fry until crisp, and then drain off oil
  • Brown slightly 3 cups or more of chopped onions (yellow onions work well) and then set onions aside in bowl
  • Brown 3 pounds of ground round or sirlion, and then pour off oil
  • Add 5 cups of stewed tomoatoes and the onions you previously set aside

Cover and cook on high until steaming, and then turn down heat to low for 1 hour.

  • Drain two small cans of red kidney beans (or less) and add to ingredients
  • Optional:  Add tiny amount of chili powder to taste

Turn back on high and heat thoroughly for a few minutes. Serve midwestern chili recipe with fresh bread.
