Quick and Easy Pie Dough Recipe

  • 2-2/3 cups of flour (unbleached white works best, although you can substitute up to 2/3 cup of  whole wheat, if you wish)
  • 1-2/3 cups of hard butter (translation: 1 stick plus 2/3 of a stick)
  • 1/2 of water with ice cubes added

Put flour and butter, which has been cut up, in the food processor, although hearty folks can mix this by hand or with a pastry cutter. Take the ice cubes out of the water and remeasure.  Add water very gradually to the mixture.  If you use a processor, use the metal blade and add water slowly until the mixture just starts to form a ball and then immediately stop processing. If you mix the ingredients by hand, add water until it all sticks together. Don't over mix or the dough gets tough! 

Roll on a lightly floured board and fit into pie pan.. If you are baking an unfilled shell, prick bottom with fork and bake at 425 degrees for approximately  15 minutes and fill with ingredients. If you are baking this quick and easy pie dough recipe with a filling, do not prick bottom but fill and bake as directed in the pie recipe. (See the pumpkin pie recipe for a great filling).
